Jerusalem Artichoke Risotto

Last night we had this jerusalem artichoke risotto.

I did give the artichokes a good scrub but peeling just seemed a bit silly so I didn’t bother. I added a couple of sticks of celery (finely chopped ) with the onions. I found the artichokes cooked down better if I put a lid loosely  on the pan to keep some of the steam in. I didn’t add any wine as I didn’t have any.

It was delicious. We had some steamed broccoli with it but any green vegetable would work fine.
